Chorizo, Leek & Onion Quiche


I love home made quiche an this is one of my own recipe's which I have just made for our tea.


 Ingredients:

Short crust pastry 
  • 220gm self raisin flour
  • 100gm Butter
  • half teaspoon salt
  • 4 tablespoons water
Filling
  • 1 Leek
  • 1 red onion
  • 3 large eggs
  • 50 gm red Leicester
  • 50 gm mozzarella
  • 3 tablespoons double cream
  • 2 tablespoons tomato sauce
  • 7 pieces of chorizo
Method

  • make pastry & blind bake 20 mins
  • fry onions & leeks until coloured
  • mix cheese, eggs, onion & leeks together with the cream
  • cover base of pastry with tomato sauce and place chorizo over bottom 
  • pour over mixture
  • bake in oven @ 160c for about 20/25 mins
